(c\u00e2rm\u00e2z) este o plant\u0103 invaziv\u0103 \u00een multe \u021b\u0103ri europene. Cu toate acestea, planta posed\u0103 poten\u021bial medicinal \u0219i de fitoremediere, este o surs\u0103 bogat\u0103 de antioxidan\u021bi \u0219i coloran\u021bi naturali. Scopul acestei lucr\u0103ri \u0219tiin\u021bifice este de a ajuta cititorul s\u0103 \u00een\u021beleag\u0103 mai bine posibilit\u0103\u021bile de utilizare benefic\u0103 a metaboli\u021bilor secundari ai plantelor\u00a0<em>P. americana<\/em>, \u00een special pigmen\u021bilor din fructe (betacianin\u0103) \u00een calitate de colorant ro\u0219u natural. \u00cen monografie sunt descrise caracteristicile morfo-biologice ale plantelor\u00a0<em>P. americana<\/em>\u00a0crescute \u00een Republica Moldova \u0219i Republica Slovac\u0103, precum \u0219i compozi\u021bia fenolic\u0103 determinat\u0103 \u00een diferite p\u0103r\u021bi ale plantei \u0219i activitatea lor antioxidant\u0103. Se discut\u0103 rolul entropiei \u00een evaluarea st\u0103rii termodinamice a c\u00e2rm\u00e2zului. Este prezentat efectul apei cu diferite grade de activare asupra extrac\u021biei substan\u021belor biologic active din fructe de c\u00e2rm\u00e2z \u0219i activitatea antioxidant\u0103 a acestor extracte. Se propune o schem\u0103 tehnologic\u0103 pentru ob\u021binerea colorantului natural din fructe de c\u00e2rm\u00e2z care con\u021bine betacianin\u0103 \u00een form\u0103 pur\u0103 \u0219i \u00een compozi\u021bie cu polizaharide (pectina, carboximetilceluloza, f\u0103in\u0103 de orez) sub form\u0103 de pulbere. Sunt prezentate rezultatele studiului stabilit\u0103\u021bii termice \u0219i durata de valabilitate a acestor compozi\u021bii \u0219i colorantului natural pur. Incrustarea semin\u021belor de porumb cu compozi\u021bia ob\u021binut\u0103 <em>colorant &#8211; carboximetilceluloza<\/em> ne a permis s\u0103 concluzion\u0103m privind capacitatea compozi\u021biilor \u00een reglarea cre\u0219terii plantelor.<\/p>\n<p>Autorii consider\u0103, c\u0103 datele prezentate \u00een aceast\u0103 monografie vor fi utile cercet\u0103torilor preocupa\u021bi de extragerea metaboli\u021bilor secundari din plante \u0219i testarea lor la activitatea biologic\u0103.
